Enchiladas and Chili

Hey everyone!  It’s been a while since I’ve tried out different recipes, but I finally cooked a couple yummy meals from scratch!  Yay! 

I made enchiladas and chili, and they tasted awesome :)

 

Enchiladas

Christina, a publicist for MyRecipes.com, was kind enough to send me a recipe for 

Chili-Cheese Black Bean Enchiladas

Thanks, Christina!  The great thing about this recipe is that it seems pretty quick to make, since it uses pre-made enchilada sauce.  It also sounds really interesting because it has cream cheese in the filling! 

 

However, even though that recipe sounded really good, I didn’t have any canned enchilada sauce so I just decided to try an enchilada recipe that said how to make homemade enchilada sauce.

So, I made Black Bean, Corn, and Zucchini Enchiladas , except I left out the corn and added a can of Red Kidney Beans instead. 

 

Here’s the step-by-step process:

 I forgot to take step-by-step pictures of the sauce, but I did make it from scratch!  Here it is:

I also made Chunky Vegetarian Chili

I didn’t take pictures of any of the steps after this, sorry!  But here is the finished product:

Overall

I thought both the enchilada and chili recipes were fab!  I liked that the recipes were quick and simple to make, and I thought they each tasted delicious!   I also liked that they were very hearty and simple, which is great when you want a meatless meal, but also something very filling.  The veggies and beans give the meals a nice texture, so you don’t even miss the meat at all!  I would definitely make the enchiladas and chili again!

    Wow, great recipes!!! I want one of each, right now please :) I have never made enchiladas from scratch, and I should. Chili is one of my favorite foods in the world. My dad used to make chili at least once a week, we’re a chili family!
