I thought both the enchilada and chili recipes were fab! I liked that the recipes were quick and simple to make, and I thought they each tasted delicious! I also liked that they were very hearty and simple, which is great when you want a meatless meal, but also something very filling. The veggies and beans give the meals a nice texture, so you don’t even miss the meat at all! I would definitely make the enchiladas and chili again!
If you haven’t checked out MyRecipes.com yet, make sure you do so! As you can see, it has a ton of great recipes!
