Breakfast Cookie Update/Tips
Hey guys! I forgot to write this in my breakfast cookie post – while it was good, it was a bit mushy and not as cookie-like as you would expect, but I actually thought it tasted good like that! The breakfast cookie was still a bit mushy because I left out a couple of steps when I made it. Here are some tips if you would like the breakfast cookie to be more cookie-like.
- Gina flattens the cookie on a plate before refrigerating it overnight. This will help the cookie to harden more and become more cookie-like. (I had just refrigerated it in the same bowl I made it in, so it was very thick and that’s probably why it was still a little bit mushy)
- Gina mixes the oats with peanut butter/nut butter, which will help the breakfast cookie stay together and solidify a bit more. (I didn’t add any peanut butter or any other nut butter, just 1/2 banana to help everything stay together)
- Lastly, I believe Heather suggested freezing the breakfast cookie for a little bit if it is still mushy.
