Breakfast Cookie!

Today for breakfast I had a breakfast cookie, which is a cool idea Gina came up with!  Thanks, Gina!

The breakfast cookie tasted really good!

It was really simple to make, but here’s the step-by-step process anyway!

I wanted to add some diced apple to my breakfast cookie, so I started with that first.

1.) Thinly slice half an apple  (I ended up only using half the apple slices, so if you want, just thinly slice 1/4 of an apple)

2.) Cut the apple slices into smaller pieces

3.) Dice the apple

4.) Pour some oats into a bowl

 5.) Now mix the oats with a little bit of water, just enough to moisten the oats.

6.) Add 1/2 mashed banana to the oats, mix, and add diced apple.  (I ended up only using half of the diced apple)

7.) Stir in the diced apple

8.) Add more oats if you like

9.) Stir everything all together again

10.) Flatten the breakfast cookie so that it’s all an even thickness

11.) Refrigerate overnight

12.) Take it out of the fridge and add any more toppings if you want, like cinnamon or chocolate chips!  (No picture because I didn’t add any toppings)

13.) Enjoy!

I really loved this breakfast cookie!  It took a while to eat because the oats were very chewy.  This breakfast cookie would make a good snack, and would be awesome to eat as dessert!

Edited to Add: The breakfast cookie was very good, but a bit mushy because I left out a few steps.  Check out my next post (Breakfast cookie update/tips) for the steps you need to make the breakfast cookie more cookie-like (not as mushy).  Thanks!
