Recaps
Hello everyone! Here’s recaps of my eats from yesterday and today.
Dinner last night was baked beans mixed with cucumber and red pepper.
Then after I ate a little bit, I decided to add a hot dog as well. The cucumber tasted okay with the baked beans, but the red pepper tasted really good with it – I really liked the crunch factor.
For dessert, I had a bowl of Cheerios mixed with pomegranate seeds, plus a glass of milk on the side.
Today’s breakfast was a piece of dark chocolate, followed by:
Yum, it was so filling! I love omelettes! And the interesting thing is that I have started to really like having toast spread with jam instead of butter when I have omelettes – I just like the contrast of sweet and savory. Plus, I think that toast spread with jam goes so well with a glass of milk, which I also had with this breakfast.
Snack: A piece of dark chocolate
Another Snack: A muffin top
For lunch, I had a repeat of yesterday’s dinner, but left out the cucumber this time.
I ate half of what was in the bowl.
Early dinner: Salad of lettuce, cucumber, and a little bit of red pepper, drizzled with olive oil and balsamic vinegar.
Later dinner: The rest of the bowl of baked beans, hot dog, and red pepper. This combo was so good, but next time I would also either have some rice or a potato along with it.
Hmmm, I didn’t eat any fruit today. I think that means I’ll have to make a fruit platter, since it seems the only time I eat my fruit is when I prepare it ahead of time.
Talk to you tomorrow!

I miss pomegranates. They aren’t in grocery stores where I am at now.

Oh, I was just finishing the little bit of pomegranate seeds we had left. I haven’t seen any pomegranates in the supermarkets now, though – I think they are out of season now. I know what you mean about missing pomegranates – the pomegranate seeds taste so good!

hey there! your dinner last night looks really interesting – I love beans, but never thought of adding cucumber to them.

LOL! I wanted to eat some slices of cucumber and just thought why not add it to the baked beans since I was going to eat that as well! The cucumber tasted okay mixed with the baked beans, but I liked the addition of the red pepper the best!
